SWEET POTATO WAFFLES

• ½ cup butter*
• 2 cups sweet potatoes* (cooked & mashed)
• 6 free-range eggs*
• 2 cups milk
• 1 cup whole wheat flour*
• 1 cup rolled oats* (finely ground in blender)
• 1 cup nuts, I LIKE PECANS, (gound)
• 2 Tbsp baking powder
• 2 tsp salt

Melt butter and set aside to cool. Mix sweet potato, eggs and milk and stir in cooled butter. Sift the rest of ingredients into sweet potato mixture. Mix until combined. Bake in a hot, oiled waffle iron.
• Serve warm with McCully’s maple syrup*.
