SWEET POTATO SALAD
• 3 cups sweet potatoes*, cooked, peeled and diced)
• 1 cup celery, diced
• ¾ cup sweet pepper*, chopped
• ½ cup onion*
• 2 Tbsp fresh parsley or cilantro, chopped
• 3 green onions, thinly sliced (optional)
Combine in a large bowl. Top with dressing of choice below.
Dressing:
• ½ cup cider vinegar*
• 2 Tbsp oil
• 1 ½ Tbsp mustard*
• 1 Tbsp honey*
Combine and pour over vegetables. Toss until well coated. Serve on lettuce and sprinkle with cheese* if desired.
