BUTTERNUT HARVEST STEW

• 2 Tbsp butter*
• 1 ½ lbs boneless pork*, cut into cubes
• 1 medium onion*, chopped
• 2 cloves garlic*, minced
Melt butter in a large saucepan. Add ingredients and sauté until meat is cooked. Drain fat.
• 3 cups chicken broth
• ¾ tsp salt
• ¼ tsp dried rosemary
• ¼ tsp dried sage
• 1 bay leaf
Add, cover and simmer 20 minutes.
• 1 medium butternut squash*, peeled and chopped
• 2 medium apples*, chopped
Add and simmer uncovered until squash and apples are tender, 20 minutes. Discard bay leaf.
